We're the Hendersons. We've raised pigs and cattle on 120 acres in southern Ohio for three generations.
In 2016, we noticed the "lard" and "tallow" in stores was hydrogenated, bleached, and deodorized — stripped of everything that made it food. So we started rendering our own, the old way: low heat, no chemicals, no shortcuts.
Today we produce about 800 jars a month, each one filled, labeled, and packed by hand. When you buy from us, you're buying from the actual people who raised the animal.

Our animals roam 120 acres of rotating pasture. No confinement, no growth hormones, no routine antibiotics.
We render in 50-gallon kettles over low, even heat. Old-school copper pots for the duck fat. It takes 8 hours. It's worth it.
We pass every batch through a fine-mesh strainer three separate times to remove any sediment. Silky smooth, every jar.

The stuff you want to know before you buy.
Tallow and lard are shelf-stable. Store them in a cool, dark cabinet for up to 6 months. For longer storage, pop them in the fridge — they'll last over a year. Duck fat should be refrigerated and used within 6 months.
Our grass-fed tallow has the highest smoke point of any natural fat at 400°F — perfect for high-heat searing and frying. Heritage lard comes in at 370°F, ideal for roasting and baking. Duck fat is best at 375°F.
